ok, eggs make sense. but why a set of 12 dozens? why not 20 dozens? or 237?

There is a very simple explanation for this. The sperm whale.
The sperm whale is an enormous creature that only has a throat that is six inches in diameter and thus can actually choke to death on realtively small fish if it doesn't chew them first. Why is that?
Because that's the way it is.:D
In a more serious vain humans through the millenia have created numerous numbering systems based on 60, 20, 12, 10, etc. I suspect a base twelve system (which would write 12 as 10) simply was creating a term like "gross" in the way we use ten tens to get 100. The difference course that 100 in base 12 is equal to 144 in base 10.
